The thickness and type of wood depends very much on your personal preferences and experience.
I use 1/4 inch MDF (Medium Density Fiberboard) mainly because it is available where I live.
Generally I make prototypes for the website and because I like making things.
If I could get good quality birch plywood, I would use that.
Just an observation, if you were to use thin wood, say 1/4 or thinner, I think that the direction of the grain would be a factor in the strength of the piece.
For example, lets say I was cutting out a pattern for a giraffe.
I would make sure that the grain runs along the length of the neck.
